CampFire Kabobs

Ingredients:

Chicken or Beef (cubed)
4 Potatoes (pre-boiled if possible)
2 Peppers (red, yellow, orange, or green)
2 Onions
2 Zucchini or Squash
3 Tomatoes (large)
Baby Corn (or small portions of corn on the cob)
Button Mushrooms
Butter
Salt
Pepper
Seasoning (such as Mrs. Dash, or McCormicks)
Heavy Duty Tin Foil

Note: Skewers are not necessary for this recipe (though traditionally used for kabobs).

Preparation:
Build a fire!  Or, if you have a grill available on your campsite, you can cook these on a grill.

Cut chicken or beef into cubes. 

Cut potatoes into cubes and boil over an open fire.  Let cool.   (Note: potatoes can be placed in the bags uncooked if you don't have a pot to boil them in first, but will have a harder consistency.  For a soft texture, boil the potatoes before placing in the foil bag).

Cut peppers, onions, zucchini/squash, and tomatoes into large wedges.

Tear off a large portion of heavy duty tin foil (heavy duty works best so that it will not tear in the fire and while handling). 

Inside the tin foil place 3-4 pieces of chicken or beef (or both if you choose), one whole potato cubed, 2-4 pieces each of peppers, onions, zucchini/squash and tomatoes), add 2-3 baby corn, add 3-4 mushrooms.

Season to taste and add butter on top.

Close up the tin foil to make a pouch.  Do not puncture holes in tin foil.  The ingredients will cook best inside with their own steam.

Place tinfoil pouch carefully on an open fire or grill.  Leave for approximately 5 minutes on an open fire, approximately 8 minutes on a grill. Using tongs or an oven mitt, carefully turn the pouch over to the other side.  Leave for another 5-8 minutes.

Carefully remove pouch from fire and peel back tin foil to check the contents.  You will want to make sure your chicken is FULLY cooked - which may take longer than the 10-16 minutes instructed above.  If ingredients are not fully cooked to your liking, close up the tin foil and return it to the fire, remembering to turn the bag after 5-8 minutes and check again.

When all ingredients are fully cooked to your liking, remove the pouch using tongs or an oven mitt.  At this point you can either eat right from the tin foil bag (careful, it will be HOT) or pour contents onto a paper plate.

Add your own twist to this classic recipe by adding one or more of the following to the bag before cooking:
* soy sauce
* BBQ sauce
* olive oil
* Italian dressing
